Refined groundnut oil, also known as refined peanut oil, is a type of cooking oil that is extracted from peanuts (Arachis hypogaea). It is made through a process of refining crude groundnut oil to remove impurities, odors, and flavors, resulting in a clear, light-colored oil with a neutral taste.

The refining process typically involves several stages:

  1. Degumming: This step involves removing any gum or phospholipids present in the crude oil using water or acid.
  2. Neutralization: In this stage, any free fatty acids present in the oil are neutralized using an alkaline substance such as sodium hydroxide. This helps to reduce acidity and improve the oil’s flavor.
  3. Bleaching: Bleaching involves the removal of color pigments, as well as any remaining impurities and odors, through the use of bleaching agents like activated clay or activated carbon.
  4. Deodorization: This is the final step in the refining process, where the oil is heated under vacuum to remove any remaining odors and flavors, resulting in a neutral-tasting oil.

Refined groundnut oil has a high smoke point, making it suitable for high-temperature cooking methods such as frying and deep-frying. It also has a longer shelf life compared to unrefined oils due to the removal of impurities that can cause rancidity.
