Refined groundnut oil, also known as refined peanut oil, is a type of cooking oil that is extracted from peanuts (Arachis hypogaea). It is made through a process of refining crude groundnut oil to remove impurities, odors, and flavors, resulting in a clear, light-colored oil with a neutral taste.
The refining process typically involves several stages:
- Degumming: This step involves removing any gum or phospholipids present in the crude oil using water or acid.
- Neutralization: In this stage, any free fatty acids present in the oil are neutralized using an alkaline substance such as sodium hydroxide. This helps to reduce acidity and improve the oil’s flavor.
- Bleaching: Bleaching involves the removal of color pigments, as well as any remaining impurities and odors, through the use of bleaching agents like activated clay or activated carbon.
- Deodorization: This is the final step in the refining process, where the oil is heated under vacuum to remove any remaining odors and flavors, resulting in a neutral-tasting oil.
Refined groundnut oil has a high smoke point, making it suitable for high-temperature cooking methods such as frying and deep-frying. It also has a longer shelf life compared to unrefined oils due to the removal of impurities that can cause rancidity.
